Our recipes begin with attention to taste and process. We make gelato in small batches using organic milk and cream from Organic Valley Coop. The shop sources only the best ingredients, often from local suppliers such as Austin Orchards, Springdale Farm and others. Everything is fresh and our flavors change with the seasons.
The gelato making process begins with the base which we pasteurize in house. Many other ice cream or gelato shops buy a pre-made base from a dairy. Controlling the pasteurization process allows us to ensure the highest quality product possible with no commercial stabilizers or emulsifiers. We make each flavor by hand in small batches, always with a cohesive flavor profile in mind.
